Easy recipe vegan banana pancakes

What can you do when it’s 10 pm and you realize you do not have eggs in the fridge to make breakfast pancakes the next day? Find alternatives on the network to mount a good breakfast with what we have in the fridge. Therefore, it was that got the recipe for vegan pancakes, which I modified a little to my liking (and food I had at home).

If we rely on the original recipe for the pancakes, the only difference here is that we do not use eggs, but replace them with banana and tad yeast. In addition, the milk we use so it is not too thick paste is of vegetable origin (soymilk, almond, etc). So vegan pancakes are made.

Ingredients for a person:

  • A ripe banana
  • 30 grams of oatmeal
  • A splash of vegetable drink
  • A teaspoon of baking powder
  • Optional: 30 grams of protein powder
  • A tablespoon of oil (and a few drops to the pan)


To make vegan pancakes are going to need a hand mixer, and a small nonstick skillet. The idea is to put all the ingredients except the vegetable drink in the mixer, beat well until everything is well integrated and adding the vegetable drink slowly until we find a creamy consistency without grommets.

Heat a small nonstick skillet (I also paint it a little with a few drops of oil, just in case) and we pouring the mixture in small quantities for more leaving pancakes and not a single and large. It is preferable to have more finer pancakes, best will in the pan.

When they browned on both sides (give them back carefully) are placed on the plate and accompanied by what you want a drizzle of honey, a few pieces of cut fruit, a little syrup, etc.


I am vegetarian and not vegan, so I used a splash of skimmed milk cow, which is what usually take the floor, and whey protein (whey protein). If you have no problem drinking milk, you can use it without problem.

I used oatmeal because it is what I have at home (if you only have oatmeal you can pass them through the blender and done! Instant Oatmeal), but you can use other types such as wheat flour or rice flour.

You can also tune the recipe and add spices such as cinnamon or vanilla. I use flavored protein, so I do not need more. No need you to take sugar or sweeteners because with banana and is very sweet.
